Honey Butter Smoked Prosciutto Wrapped Shrimp

Ingredients

  • 2 lbs large shrimp
  • 4 oz prosciutto sliced in half

Honey Butter

  • 1 stick of butter
  • 1/4 cup honey
  • 1 tsp sweet rub

Instructions

  • Clean the shrimp by removing the shells, legs, and tails. Then, devein the shrimp by making a shallow cut along the back and removing the dark vein. Rinse the shrimp and pat dry with paper towels.
  • Season the shrimp with the sweet rub seasoning. Make sure to evenly coat each shrimp. Let the shrimp sit for about 10 minutes to allow the flavors to fully penetrate.
  • Cut the prosciutto into half-length pieces. Then, wrap each seasoned shrimp in half a slice of prosciutto. Make sure that the prosciutto fully covers the shrimp and that the edges are secured.
  • Season the wrapped shrimp with the sweet rub seasoning again. This will add extra flavor to the prosciutto and shrimp.
  • In a small saucepan, melt the butter over low heat. Add the honey and stir until well combined. Set aside. This mixture will be used as a baste for the wrapped shrimp.
  • Preheat your smoker to 250°F. Place the wrapped shrimp on the smoker.
  • Smoke the wrapped shrimp for 20 minutes. This will infuse them with smoky flavor and cook them through.
  • Baste the wrapped shrimp with the honey butter mixture. Make sure to brush the mixture evenly onto each wrapped shrimp.
  • Continue smoking the wrapped shrimp until the sauce sets, about 10-15 minutes. Keep an eye on the wrapped shrimp and make sure that they do not burn.
