Cheesy Chorizo Mulitas

Ingredients

  • 1.5lbs chorizo (either beef or pork)
  • 1 green bell pepper (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 1 large sweet onion (thinly sliced)
  • 4 minced garlic cloves 
  • 8 oz queso manchego (sub Oaxaca cheese)
  • 16 Yellow corn tortillas 

Slasa

  • 1 steak tomato 
  • 2 jalapeño peppers 
  • Juice of 1 lime 
  • 2 tbsp cilantro 
  • 2 tbsp minced red onion 
  • 3 garlic cloves 
  • Salt and pepper to taste 

Instructions

  • Start off by prepping up all the veggies.
  • Once that is done, remove the casing from the chorizo.
  •  Now preheat the Loco griddle on sear mode and the left burner on low heat.
  • Once preheated, on the sear mode side, start to char the jalapeños, tomatoes and garlic cloves. On the low heat side, add the bell peppers and sweet onions, sauté those on low heat.
  • Once the ingredients for the salsa are nice charred and tender, add them to a food processor or blender and blend until smooth. After, add them to a bowl, top off with red onion, cilantro, lime juice, add salt and pepper to taste.
  • Now, leaving the griddle on sear mode, add the chorizo and start to crisp it up, turning it every 3 minutes until it’s nice and crispy.
  • Next add the minced garlic to the bell peppers and onions, seasoning them with salt and pepper.
  • Combine the sautéed veggies and chorizo together. Once that is done, turn the heat to low heat and add the cheese to the mixture. Keep mixing until the cheese is fully melted.
  • Next, lay down the tortillas on medium heat, and add the chorizo mixture to them. Top off with another tortilla and keep turning until the tortillas are nice and crispy. Remove from heat and now top off with that delicious salsa. 

Notes

You can use any cheese of your liking and or any tortillas.
