There is nothing better in my opinion then some carne asada tacos. Topped with a bone marrow salsa is just next level.
Carne Asada Tacos W/ a Bone Marrow Salsa
- 1 beef bone marrow cut in half
- 1 lb thin sliced chuck roast
- 3 tomatillos
- 1 jalapeño pepper
- 1 serrano pepper
- 1 tsp chipotle powder
- 2 tsp chili powder
- 3 garlic cloves
- 1 Roma tomato
- ½ tsp oregano
Start off by seasoning the chuck roast with your favorite carne asada seasoning. I used Spanglish asadero all purpose seasoning.
Once you season it up, place aside and cut your veggies in half for faster cooking. Remove the husks from the tomatillo.
Get your grill up to 350 degrees. Place your veggies on the grill and roast them until nicely charred and tender. Now remove them and add them to a blender. I used my molcajete for this. Once blended, set aside.
Now, place the bone marrow on the grill. Once you see the top of the bone marrow start to bubble, Start to sear the chuck roast as well. You want to sear it about 3 min per side.
At this point, the bone marrow should be done and the center of it you should be able to scrape it with a spoon. Add it to the salsa and combine thoroughly. Chop the meat into bite size pieces with a clever or slice it with a knife.
Now let’s build a taco. On a warm tortilla add the meat, garnish with the cilantro, onion and top off with that delicious salsa.
You can use skirt steak and or flank steak.
