Start off by making the marinade. In a food processor, throw in all the ingredients for the marinade and blend until smooth. Then, set it aside.
Butterfly the drumsticks open. Lay them flat on a cutting board and run your knife along the thickest part, slicing until the bone is exposed. (You want to just open them up.
Once you do this to all of them, season them with salt and then place in a bowl. Set aside and preheat your grill to 350 degrees.
Cook the chicken about 3 minutes per side until you get a nice char. They will look a bit funny with no marinade. Once they are nicely charred and not burnt, baste with that marinade on one side. Then, flip them after 3 min and baste the other side.
Remove the chicken once it reaches an internal temperature of 175 degrees. Let cool for 3 min before serving.
Serve along cilantro lime rice. I recommend a instant read thermometer for accurate temperature reading!
