3lbs chicken wings
Salt and pepper
Corn starch
Marinade
1 cup butter milk
1 cup wing sauce
Sauce
1 stick of butter
3 tbsp cooking oil
3 tbsp cayenne pepper
1 tsp chipotle powder
1 tsp garlic powder
1 tsp mustard powder
3 tbsp brown sugar
2 tsp paprika
Instructions
Start off by making the marinade. In a bowl, add the buttermilk and the wing sauce, stir to combine, next add your wings and place them in the refrigerator for 2 hours.
After 2 hours, remove them from the marinade and place them in a separate bowl, do not pat them dry.
Add about 3 tbsp corn starch to coat and then salt and pepper to season. Then add about 1 tsp of each, or your favorite chicken seasoning. The corn starch will give them a nice and crispy skin.
Preheat your grill to 350 degrees and then cook your wings until they reach an internal temperature of 175.
When they are done, place them aside and let them rest.
Make the sauce in a small sauce pan. Add the oil, butter, and the wing sauce. Once the butter is dissolved, add the dry ingredients and stir them well.
Turn your heat to low on this step. Leave on the heat for about 3 minutes, once the ingredients are aromatic remove from heat.
