Grilled Nashville Hot Chicken Wings

Ingredients

  • 3lbs chicken wings 
  • Salt and pepper 
  • Corn starch 

Marinade

  • 1 cup butter milk
  • 1 cup wing sauce 

Sauce

  • 1 stick of butter 
  • 3 tbsp cooking oil 
  • 3 tbsp cayenne pepper 
  • 1 tsp chipotle powder 
  • 1 tsp garlic powder 
  • 1 tsp mustard powder 
  • 3 tbsp brown sugar 
  • 2 tsp paprika 

Instructions

  • Start off by making the marinade. In a bowl, add the buttermilk and the wing sauce, stir to combine, next add your wings and place them in the refrigerator for 2 hours.
  • After 2 hours, remove them from the marinade and place them in a separate bowl, do not pat them dry.
  • Add about 3 tbsp corn starch to coat and then salt and pepper to season. Then add about 1 tsp of each, or your favorite chicken seasoning. The corn starch will give them a nice and crispy skin.
  • Preheat your grill to 350 degrees and then cook your wings until they reach an internal temperature of 175.
  • When they are done, place them aside and let them rest.
  • Make the sauce in a small sauce pan. Add the oil, butter, and the wing sauce. Once the butter is dissolved, add the dry ingredients and stir them well. 
  • Turn your heat to low on this step. Leave on the heat for about 3 minutes, once the ingredients are aromatic remove from heat. 
  • Toss the wings with the sauce. 

Notes

Serve along your favorite dipping sauce.
