-Preheat your smoker to 275 degrees. Now let’s prep the bologna by scoring it. Score around the log every inch then down the log every inch as well. Go about 1/2 inch deep with your knife. This is gonna allow the bologna to absorb the great smoke flavor.
-Now rub mustard on the bologna, season it with your favorite bbq seasoning. Now place it in the smoker and let it go for 2.5 hours.
-The bologna is cooked all the way so, we are just adding smoke flavor and reheating it. Once 2.5 hours have passed, glaze it with your favorite bbq sauce. Let it go for another half hour. This will allow the glaze to tack down.
-Let it rest for 10 min before slicing it. Slice it as thick or thin as you like.
