This delicious recipe is so addicting and easy to make! you are going to want to do it every time. It’s perfect as an appetizer or even lunch. Make it yours by adding additional toppings!
Preheat your grill to 375 degrees
Slice your russet potatoes into 1/4 inch rounds
Add 1 tbsp avocado oil to a cast-iron skillet
Place your potatoes all around the skillet until stacking them about 1/2 way on top of each other, do this until you reach the center.
Season with salt and black pepper, then add your butter, spread the cubes around.
Wrap tightly in foil, then place your skillet on the grill, check on your potatoes after 30 min and see how tender they are.
Then add your Parmesan cheese all around, let the cheese get nice, melted, and charred for about 5 min. Then remove let cool before you serve. I added parsley to garnish.
