Grilled Surf and Turf Tacos
- 1 Lb flap meat
- 1 Lb shrimp
- 10 street taco flour tortillas
- 2 tsp ancho Chile (sub chili powder)
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 2 tsp lemon pepper
Chipotle Sour Cream
- ¼ cup sour cream
- 1 tbsp chipotle sauce
- Juice of ½ lime
- 1 tsp seasoning mix
- Salt to taste
- 1 jalapeño pepper
- 1 tomato
- ¼ red onion
- 1 tbsp cilantro
- 3 garlic cloves
- Salt and pepper to taste
Preheat the grill to 350 degrees.
In a bowl, mix the seasoning mix.
prep the meat by adding salt and pepper then add the seasoning mix. After this, set aside the meat. Season the shrimp the same way.
Char up the ingredients for the salsa by placing the tomatoes, jalapeño and onion on the grill. Once they are charred, remove and add to a food processor, along with the cilantro and garlic. Add salt and pepper to taste. I left my salsa chunky.
Sear up the meat first. Cook the beef 3.5 to 4 min per side, depending how well you want yours cooked and then the shrimp 1.5 min per side.
While the meat is resting, make the chipotle salsa. In a bowl, add all the ingredients and mix until fully combined.
Slice the meat against the grain for a more tender bite.
Now heat up the tortillas and assemble! Add the chipotle sauce, meat, shrimp and top off with that salsa. Add a squeeze of lime juice to freshen it up.
You can pretty much use any cut of steak!
