Grilled Marinated Lamb Lollipops

Lamb is an acquired taste! I really enjoy lamb as of late. I wasn’t a fan before but it grew on me. This recipe is so delicious, especially if you are a fan of lamb. Those herbs and Dijon mustard work so well. Really compliments the lamb well.

Length of time from start to finish: 1:30 hours
Difficulty: Easy
  • 1 rack of lamb
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1/2 tsp black pepper
  • 1 tsp dried dill
  • 1 tsp dried parsley
  • 1 tsp dried rosemary
  • Juice of 1/2 lemon

-Let’s prep the lamb first. With a sharp knife, score the fat of the top of the lamb rack about 1/4 inch deep.

-Now separate the bones individually. Now let’s make the marinade. In a bowl, add Dijon mustard, olive oil, rosemary, dill, parsley, lemon juice,  and black pepper. Combine these well.

-Place the lamb lollipops in a zip lock back and pour in the marinade. Marinate them for 30 min minimum or preferably overnight.

-Preheat your grill to 400 degrees. Once preheated, grill the lollipops turning every min until they reach an internal temperature of 130 degrees. This will give you medium-rare finish. Once they hit 130 internal temperature, let them rest for 5 min before serving.

 I recommend a meat thermometer to accurately read the internal temperature. Serve along with your favorite veggies.
