Cilantro Chimichurri Flank Steak Tacos

These are very flavorful and easy tacos to make. This marinade takes the flank steak to another level. 

Length of time from start to finish: 2 hours 30 min 
Difficulty: Easy
Ingredients: 
  • 1.5 lb flank steak 
  • Cilantro chimichurri 
  • 1 bunch cilantro (stems and leaves)
  • 1 Tsp chili flakes 
  • 3 garlic cloves 
  • 1/2 tsp black pepper 
  • 3 tbsp red wine vinegar 
  • 1/4 red onion 
  • 1 tsp dried oregano 
  • 1/2 cup olive oil 
  • Salt to taste

Instructions:

-Let’s start off by making the chimichurri sauce.  In a good processor add, cilantro, onion, garlic, olive oil, chili flakes, oregano, red wine vinegar, and black pepper, blend until smooth, place in a bowl and add salt to taste. Set 1/4 cup of chimichurri aside.
-Now place the flank steak in a foil pan and add the chimichurri sauces and marinate for 2 hours or overnight.
-Now preheat the grill to 350 degrees and grill the flank steak until it reaches an internal temperature of 120 degrees. Let it rest for 5 min before slicing against the grain.
-Heat up your tortillas and now it’s time to assemble, cube up the flank steak and add more cilantro chimichurri sauce

This is such an amazing recipe, you can use skirt steak or chuck roast. I highly recommend a meat thermometer.
