Avocado Toast with New York steak and eggs

This is one of those recipes that you say, why didn’t I do this sooner. Avocado toast in itself it’s so good, add the steak and eggs, and you have breakfast. This is really filling.

Length of time from start to finish: 35 min

Difficulty: Easy

Ingredients:
  • 1 12oz New York steak
  • 1/2 avocado
  • Sourdough bread slice
  • 1 egg
  • Garnish: Parmesan cheese

Instructions:

-Preheat your grill to 350 degrees and season your steak with your favorite seasoning.

-Cook your steak to your liking! I personally like med rare. the internal temperature is 135 for Med rare.

-Once you cook your steak place a small or regular size cast iron and fry one egg, you can always cook the egg to your liking. Toast the one sourdough slice with butter.

-Then assemble, I smashed the avocado all over the bread, then came the steak, pile on the egg and garnish with Parmesan cheese.

Remember to rest the steak for 5 min before slicing. This allows the juices to redistribute. Before cooking your steak, leave it out on the counter for at least 30 min. Also before cooking your steak, pat it dry to make a great crust.
