Grilled Chicken Quesadilla w/ Fresh Guacamole

Grilled Chicken Quesadilla with Fresh Guacamole

  • 1 lb chicken thighs 
  • ½ lb Oaxaca cheese 
  • 1 large burrito tortilla


  • 2 tsp chipotle powder 
  • 2 tsp garlic powder 
  • 1 tsp cumin 
  • 2 tsp lemon pepper 
  • 3 tsp smoked paprika powder 

Guacamole Salsa

  • 1 large avocado 
  • ½ Tomato
  • ¼ Red onion
  • 1 tbsp cilantro 
  • 1 jalapeño pepper 
  • Juice of 1 lime 
  • Salt and pepper to taste 


  • Start off by preheating your grill to 300 degrees.
  • Now let’s make the seasoning! In a bowl, combine all the spices for the seasoning.
  • Once you’ve combined the spices , grab a bigger bowl and add the chicken thighs. Coat them well with cooking oil. Then, season them first with salt, pepper and then the spice mix.
  • Place them on the grill and now make the guacamole!
  • Mince all the ingredients and smash the avocado, add them to a bowl , season with salt and pepper to taste.
  • Now check on your chicken thighs! You want to flip them after 3 minutes. Remove them once they hit an internal temperature of 175. 
  • Shred the Oaxaca cheese.
  • Once the chicken is done, remove and let rest for 3 minutes before slicing it.
  • Slice the chicken and assemble! In the tortilla, add the cheese, chicken and more cheese.
  • Place the quesadilla on low heat and turn every min until the cheese melts.
  • Let cool for 3 min before serving. 


Serve along the guacamole!
