Cilantro Lime Butterflied Chicken Drumsticks

These drumsticks are so easy to make! You just need to have a little patience and a sharp knife when splitting them open.

Cilantro Lime Butterflied Chicken Drumsticks

  • 5lb chicken drumsticks 


  • 1 bunch of cilantro 
  • 7 garlic of cloves 
  • 1 tsp black pepper 
  • 2 tsp paprika powder 
  • ½ cup avocado oil (sub olive oil)
  • juice of 3 limes


  • Start off by making the marinade. In a food processor, throw in all the ingredients for the marinade and blend until smooth. Then, set it aside.
  • Butterfly the drumsticks open. Lay them flat on a cutting board and run your knife along the thickest part, slicing until the bone is exposed. (You want to just open them up.
  • Once you do this to all of them, season them with salt and then place in a bowl. Set aside and preheat your grill to 350 degrees.
  • Cook the chicken about 3 minutes per side until you get a nice char. They will look a bit funny with no marinade. Once they are nicely charred and not burnt, baste with that marinade on one side. Then, flip them after 3 min and baste the other side.
  • Remove the chicken once it reaches an internal temperature of 175 degrees. Let cool for 3 min before serving. 


Serve along cilantro lime rice. I recommend a instant read thermometer for accurate temperature reading!
