Sweet N Sour Smoked and Fried Chicken Drumsticks

These drumsticks are next level! If you like sweet and sour sauce and chicken drumsticks, this is a great recipe for you. 

Length of time from start to finish: 1:55 min 
Difficulty:  Easy 
Ingredients: 
  • 4lbs Chicken drumsticks
  • Seasoned salt 
  • 1 cup panko 
Sweet and Sour Sauce:
  • 1 cup pineapple juice 
  • 2 tbsp soy sauce
  • 1/3 cup rice wine vinegar 
  • 3 tbsp ketchup 
  • 3/4 cup packed light brown sugar 
Slurry:
  • 1.5 Tbsp corn starch 
  • 2 tbsp water

Instructions: 

-Preheat your smoker to 275 degrees.

-Now, let’s prep the chicken drumsticks. Use a sharp knife to run along the bone in the drumsticks and use your fingers to separate the meat to either side. This will give it a butterfly look.

-In a bowl add panko and seasoned salt, coat the drumsticks well and place in smoker. While those are smoking, let’s make the sauce.

-In a sauce pan, add all the ingredients for the sauce except the slurry, you want to add that last. So make the slurry by dissolving the cornstarch in water, now stir all ingredients together until you get a small boil. You want to stir consistently so they don’t burn.

-After 10 minutes, add the slurry. Stir it slowly into the sauce. After 3 minutes, turn off heat and let sit. 

-Once the chicken reaches an internal temperature of 160, fry them at 350 degrees for 3 min. After all the chicken is fried, brush on the sauce. 

Highly recommend a meat thermometer. Garnish with green onion and sesame seeds. Serve along white rice or your favorite sides.
