Smoked Braised Lamb Birria

Have you ever had birria? If you haven’t you need to. I made this birria with a leg of lamb. It’s extremely delicious and flavorful. That smokiness on that birria is next level, I used a pre-made birria sauce from ja-listo, I am not sponsored by them, they are a small family business and I wanted to try it. I highly recommend it. This is birria made easy.

Length of time from start to finish: 7 Hours
Difficulty: Easy
Ingredients:
  • 3.5lb leg of lamb
  • 8 oz ja-listo birria sauce
  • Seasoning for the lamb (Al pastor by Spanglish asadero)
Fresh Guacamole Salsa:
  • 2 hass avocados
  • 5 tomatillos
  • 2 tbsp cilantro
  • 1/4 sweet onion
  • Juice of 5 lemons
  • 2 garlic cloves
  • 2 jalapeño peppers
  • Salt and pepper to taste

Instructions:

Let’s preheat the smoker to 275 degrees. Then, prep the leg of lamb.

Remove all the silver skin from the leg. Try not to cut deep into the meat by doing this. Now, score the meat the knife about 1/4 inch deep, season the leg of lamb with your favorite seasoning.

Now, place it in the smoker and smoke until 175 internal temperature. Then, place it in a foil pan along with 8oz  ja-listo birria sauce and 1.5 cups of water. Cover and place back on the grill for an additional 2 hours.

-Then remove and let it rest for 30 min before shredding. Once you remove it, drain the liquid and place it in a bowl.

Now, while the leg of lamb is resting, make the avocado salsa. Place all ingredients in a blender. Remove the seeds from the avocados. Blend until smooth then add to a bowl, add salt and pepper to taste.

-Once the lamb has rested, shred and use it on many different things, make tacos, burritos, tortas and the list goes on.

 I recommend a meat thermometer for this cook. I used chihuahua melting cheese.
