If you like a great sandwich, this one is for you. This sandwich is so filling and delicious, especially with that grilled chicken.
Length of time from start to finish: 2 hours
- 1 whole chicken
- 1 large ciabatta bun
- 1/2 steak tomato
- 2 large lettuce leafs
- 1/4 red onion
Chipotle sour cream:
- 2 tbsp sour cream
- 3 tsp chipotle sauce
- 1 avocado
- 1 tsp chili flakes
- 2 minced garlic
- 1 tsp salt

-Let’s prep the chicken by cutting the spine. Use kitchen scissors, cut along the back of the spine, and make a small cut on the breast bone, now spread the chicken until it lays completely flat by pushing down on the chicken breast.
-Now let’s season the chicken underneath the skin and on the skin. Use your favorite poultry seasoning.
-Preheat the grill to 350 degrees and then place the chicken on the grill. While the chicken is cooking let’s cut up the veggies.
-Slice the tomatoes into thin rounds, slice the onions thin, leave the lettuce leafs whole.
-Now let’s make the sauce. In a small bowl, add sour cream and the chipotle sauce, combine throughly.
-When the chicken hits an internal temperature of 165 and it’s ready to come off, give the chicken a nice sear.
-While it’s resting, toast the buns, and make the avocado spread. In a bowl add the avocado, chili flakes, minced garlic, and salt, smash and mix throughly.
-Now let’s assemble. Shred the chicken, mix both the dark meat and white meat. On the bun add chipotle sauce, lettuce, tomato, red onion, pile on the chicken and add the avocado spread, now cut the sandwich to your liking
Serve these along with fries. 2 zones of cooking are recommended for your grill, one hot one cooler zone. I highly recommend a meat thermometer to read the internal temperature of the chicken.
